We use hand-selected barrels from a large private stock of premium Kentucky straight bourbon whiskey. The bourbon must meet our highest standards for character, body and overall flavor before being used to craft our prestigious and robust Kentucky bourbon.
Although corn is the predominate grain, the mash bill used to craft Calumet Farm Bourbons is traditionally known as a ‘high-rye’ mixture. These percentages allow for the bold, yet smooth flavors of our bourbon to present well, whether that is neat, over ice or in a classic cocktail.
Western Spirits Beverage Company has owned and aged its premium stock of Kentucky straight bourbon whiskey for over a decade. Over this time, barrels have been sampled and ‘picked-over’ much like trainers reviewing a sire. Many barrels fall short of possessing the characteristics and qualities needed to make our bourbon. Even fewer are selected to craft our prestigious line of bourbons. Such high standards produce higher quality bourbons but also restrict the supply we offer to consumers.
Working closely with the team at Three Springs Bottling in Bowling Green, Kentucky, Calumet Farm Bourbons are crafted with care and the firm understanding that to truly produce ‘a winning spirit’, quality must be paramount.
We use extremely small batches of just 19 barrels for our Single Rack Black program. All barrels used are aged in a single, center cut rack from the ideal maturation location and conditions inside the rick house. These expressions of the Calumet Farm Bourbon family are a true convergence of craftsmanship and flavor.
Our most premium, 16, 15, and 14 Year Old Single Rack Black Kentucky Straight Bourbons are Non-Chill Filtered for added depth of character and color.
